He used to "score" after promotion from academy while he was instructed to get up for set pieces (or whatever it's called) prior to overtraining him for short passes and changing individual instructions.
AlcĂĄzar, Ortiz and Quintanilla "scored" a few goals in recent seasons while playing in defense (mostly fullback, but I think that AlcĂĄzar scored at least one while playing as central defender (with normal instruction)), but given none of my players is "actually
a defender", they just play in defense, but have higher overall rating in at least one position / role in midfield (or even in attack), so I don't think they shouldn't count.
I think that if your attackers have relatively low attacking stat then other positions / roles that "add to team's attacking stat" or players with relatively high attacking stat outside of those positions / roles might "get on the score sheet" more often.

My central defender has already scored from free-kicks and corners. I think it depends on the style of play and the profile of the defender: mine is over-trained in power (with the instruction to 'go up from set-pieces') and I used to play direct.
