On Saturday lunchtime, I had a family meal.
We made Bánh xèo :)
You won't find this in Asian restaurants (or maybe in very large cities), and yet it's really easy to make!
It's a savoury filled pancake.
The batter is made with eggs, rice flour, grated coconut and turmeric.
The stuffing is made from minced pork, with soybean shoots for crunch (but if you don't have any, you can substitute canned bamboo shoots), and if you have the money, you can add a nice prawn tail .... spice, mint, coriander, spring onions, baby spinach, baby mustard sprouts for the greenery ... but here too you can make do with what you've got and just add some chopped salad leaves (iceberg lettuce, for crunch too).
It's really very easy: you make the crêpe, then cook the filling with spices in another pan.
Stuff the crêpe with your stuffing, add the fresh greens and fold in 2.
