You'll really see a difference with level 10 infras (the maximum), otherwise you'll hardly notice any difference at all.

I'd like to ask if the staff are retiring? I've never seen this happen since I started playing VF.

Your infrastructure has no influence whatsoever on the percentage gained in team training: only your assistant coach has an impact.
But I can't tell you the precise difference between a 50 and a 90. I don't know the method for calculating how much a coach will make a player with a potential of X and a progression coefficient of X gain.

No, because the retirement age for staff is fixed and identical for everyone: 65.
You will simply receive an official private message informing you that your staff has retired and you will have to recruit another one.
If one of your staffs is already 63 (for example), I'd advise you to think ahead and recruit another staff member to replace him/her as soon as possible.

Nicularo: Non car la retraite des staffs est fixe et identique pour tout le monde : 65 ans.
Tu recevras simplement un message privé officiel pour t’informer que ton staff est parti à la retraite et tu devras en recruter un autre.
Si l’un de tes staffs a déjà 63 ans (par exemple) je te conseille d’anticiper et de recruter des à présent un autre staff pour le remplacer.
