I took this player out of the cdf today:
S. Intaraat
He was an AT and I turned him into a MD before taking him out, sacrificing 1 point of potential, and now he's coming out with attacking characteristics... Is this normal or is it a bug, because if it's normal I don't really see the point...

Yes normal, learning the position gave him 1 pt in pass

As MrHomann wrote, you didn't "turn" him into a MD but you made him learn the position before he was promoted so he's still a striker.

Ok, I've never done that before, I didn't quite understand, I thought it was more interesting, because swapping a point of potential for a point of pass isn't great 🙄
At the very least, I can make him an MD with an attack command, he's just got 3 points in speed which he'll never use

At this stage, you might as well do MOL or Pivot
